Peggy Porschen - Creator of Exquisite Wedding Cake Couture

Peggy Porschen, the grand artisan of choice for celebrities and royalty alike.

We have long been fans of the utterly charming Peggy Porschen and her exquisite wedding cakes. We were delighted when she took the time to talk to us about her exquisitely crafted works or art. Her cakes are so beautiful it’s almost sacrilege to cut into them, but just one taste and you will understand why her cakes are in such great demand. She is the grand artisan of choice for celebrities and royalty alike, including the super stylish Stella McCartney, (though ever discrete, Peggy politely declines to talk about the who’s who of her order books.) The good news is, you don’t have to be royalty or a celebrity to enjoy one of Peggy’s gorgeous cakes, as her beautiful and diverse range thankfully comes with a wide range of price tags too!

How did you become involved with designing and making such beautiful cakes?

My passion for cakes goes back to my childhood. I grew up in Germany and cakes play a big part of family life. It was a family tradition to enjoy Sunday tea with beautiful cakes. As I child my parents made sure that I had beautiful birthday cakes, they fascinated me, so from the age of 14 I started to make and design my own.

What would you describe as your signature style?

My style has evolved over the years and will probably continue to do so. My cakes have very intricate detail and are feminine, floaty and romantic. I love flowers, and have always been fascinated by their beauty. My mum is a florist so I probably inherited this from her. I am also known for combining colours and using different colours that complement each other. I use vibrant colours like hot pinks and reds, sherbets, sorbets and pastels.

Each year you unveil a new collection. Where does your inspiration come from?

I am inspired in much the same way as fashion designers. I am influenced by trends but also need to look ahead of those. For my current collection, my inspiration came from the experience of my own wedding last year. My new collection draws on tradition. Tradition is good in weddings, it is something to cherish with your memories. I like to give this a modern twist – vintage, crystals and lots of glamour. Sometimes I can find an unexpected source of inspiration.

What’s hot right now in the world of wedding cakes?

There is a big move at the moment towards classic tiered cakes and making a strong statement centerpiece. These are very elegant and beautiful with gorgeous sugar-craft detail – stunning but restrained to give the important wow factor!

You are known for your exquisite and beautifully detailed designs, what’s the grandest wedding cake you have ever made?

The grandest cake that I made was for a Saudi Royal wedding and was a stunning 3ft high creation! It was beautifully opulent and reminiscent of a grand chandelier. The impressive centerpiece had intricate piping, mirroring the lace of the Brides dress and was draped with strings of sugar-craft pearls. The masterpiece was erected using crystal ‘candelabra’ pillars – very glamorous!

Tell us about your wedding?

I was married last year back home in Germany. I am very blessed, as I could choose whatever cake design I wanted, though this can be slightly overwhelming when the choice is infinite. My cake was designed with the help of a colleague, as she helped me to be more objective. I wanted my cake to be quite traditional but with a modern twist. It was a classic cake and had my trademark intricate piping. There is a very similar one in my new collection, but of course, mine was unique, a couture design! The overall look for my wedding was very feminine, traditional and romantic. It was very special, as in addition to being able to have my gorgeous cake as a stunning centerpiece, I had my beautiful butterfly cookies displayed in vintage birdcages as table-centers.

What advice would you give to Brides?

The advice I would give to Brides is don’t compromise on what you want. Even if your budget doesn’t stretch as far as you would like it to you can be creative and achieve the wedding of your dreams. Have a go at one of the cake designs from my books or come along to one of our master classes and learn how to decorate a cake yourself. You don’t need to be extremely artistic, the only requirement to make a beautiful cake for yourself is patience and lots of practice – that is how I began.
